Grilling Tools For Different Meats

You consider yourself a grillmaster. You have immediately earned my respect and admiration.

But as a grillmaster do you have all of the important tools of the trade? Do you have different tools for different types of meat?

Let me explain.

STEAK

It’s heavy and needs to be flipped without steak juices escaping all over the place. A SPATULA is the tool you need at grillside for this delicious dish.

STEAKBURGERS

Lighter than steak, but still substantial, burgers need proper flipping as well. But these babies require a SMALL SIZE SPATULA just large enough for the patty.

HOT DOGS

Hot dogs have a distinctive shape and require a tool to match. TONGS are your best bet for turning and grilling these to perfection.

BONELESS CHICKEN BREASTS

Yum! Boneless, skinless chicken breasts are a favorite around our house as well. Use a PRONGED FORK to do right by this healthy meat.

SALMON

Seafood, especially salmon, is very delicate so it requires extra care and attention. Use ALUMINUM FOIL to wrap this meat before placing it on the grill. It’ll help it cook evenly and keep it all in one piece!

 

Now that you know all the tools of the trade, make sure you’re locked and loaded for grilling season. The right tool makes all the difference!

Checklist for Planning Your Father’s Day Cookout

Dad’s big day is coming up! June 15th is Father’s Day and it’s time to celebrate!

Lots of us equate celebrating with food. Why? Because it’s how humans have shown love since the dawn of man.

And what better way to show Dad you love him than with a steak and beef-filled cookout?!?!!

To make sure we don’t forget a thing, let’s make a checklist of things we’ll need to make this cookout DA BOMB:

 

1. High-quality steaks, burgers and whatever kind of beef Dad loves

2. Veggies for amazing kabobs or fantastic, colorful side dishes

3. A clean grill!

4. Spatula/tongs for optimal grilling

5. Buns or bread

6. Dessert

7. Condiments, condiments, condiments

8. Plates, cups, utensils

9. Ice!

10. Beverages of Dad’s choice

11. A beautiful tablecloth/table setting – Dad-themed, of course!

12. Lots and lots of love!!!

 

Definitely tailor your fiesta to your specific needs but this is a great start. And check out some yummy menu ideas for Dad’s day over here. Hint:  Steak is the main course!

Follow this list and maybe you’ll find, like I have, that planning to celebrate someone is almost as fun as the celebration itself!

Memorial Day Party Checklist

If you’re like me, hosting parties is fun, but you get a little frazzled just beforehand.

Did I forget anyone? Did I forget anything? Do I have enough food?

All of these questions come tumbling down upon us if we don’t prepare well in advance.

And, well, I never seem to do that.

So here is a Memorial Day Party Checklist for those of us who need a little bit of help.

Location? Check.

Seating? Check.

Clean grill? Check.

So many things to think of, but the beauty here is SOMEONE ELSE THOUGHT OF EVERYTHING!

I love it when that happens.

So whether you’re serving burgers or brisket or steaks or hot dogs, you can be sure your party is a success.

Cinco Beef-Inspired Recipes for Cinco de Mayo

Oh, how I love special days that allow me to focus on food! Beef, in particular.

As you know, I’m kind of obsessed.

So, the fact that Cinco de Mayo is coming up gives me great joy. I can dream up all kinds of beefy delights for that day.

AND, it’s my son’s birthday! We always get to celebrate doubly in spicy style!

The fifth of May, 1862, is when the Mexican army was victorious over the French in the Battle of Puebla and now it’s become a day to celebrate Mexican heritage and pride.

So in honor of Cinco de Mayo I give you cinco recipes you can use to celebrate, too!

UNO:  Delicious, nutritious steak fajitas (above). I mean, who doesn’t love steak fajitas? This recipe calls for Kansas City strip steaks sliced up good!

DOSCumin marinated flank steak. A special twist to give your flank steak some zing!

TRESCarne asada. A classic.

CUATROFlat iron steak tacos. I love the heartiness of the flat iron beef. Yum!

CINCO:  Flavorful, colorful pico burgers. Try ‘em and this may just become your go-to burger from now on. Use Wagyu Kobe beef and you’ll be hooked!

Time for Grill Spring Cleaning!

It’s time to get out there and fire up that grill for some delicious burgers, steaks, dogs – you name it!

But you don’t want to put that beautiful beef on grates gunked up with last year’s barbecue.

Gross.

Does Your Burger Need a Lift?

If the answer is YES, then you need a Burger Lift!

It’s an elevated coaster for that really juicy burger. The juice drips onto your plate and doesn’t create a soggy bun.

Genius? Or unnecessary?

I like the idea of a non-soggy burger bun, but I’m not sure I’d go to all the trouble of utilizing a Burger Lift.

I’m kinda lazy like that.

Epic Face-Off: Burger Vs. Hot Dog

As these football playoffs continue, my mind is always on food. I like to eat while watching games – well, and while doing basically anything.

It reminds me of another epic battle:  The one between burgers and dogs.

There are voracious supporters in either camp, but which one is the real winner?

Well, whoever gets to eat it, is what I say!!!!

The ones I like – burgers AND dogs – are all made with beef. So, to me, everyone wins.

But in this poll, burgers were the clear winner in preference.

So what’s your vote? Burgers or hot dogs?

14 Ways to Eat Steak in 2014

Steak. My favorite. And now that a new year is here it’s the perfect time to try new and different things with my old favorite.

So how about trying these 14 ways to eat steak in 2014?

Some you may have seen before, but some may be completely new. Let’s branch out! Discover new ways of enjoying something.

I’m game. Are you?

Here are my 14 Ways to Eat Steak in ’14:

1) Steak Soup

2) This recipe for Thai Beef Salad

Thai Beef Salad

Serves: 4

Ingredients:

Celery, ¼ inch bias cut     2 stalks

Carrots, Julienned            2

Green onions, cut on the bias

                                    1 bunch

Asian BBQ flank steak     1 lb

Fresh basil, chiffonade      12 leaves

Cilantro, minced             ½ bunch

Olive oil                                    ¼ C

Rice vinegar                   ¼ C

Jalapeno, minced             ½

Brown Sugar                  2 T

Garlic, Minced                1 T

Sambal                          2 T

Method:

1. Cook the flank steak to medium rare, or desired doneness, and chill.

2. Thinly slice the beef, against the grain, and combine with the rest of the ingredients.

3) Steak and Veggie Kabobs

4) Steakburgers – any way you choose, with Swiss cheese, Vidalia onions, avocado – you name it!

5) Steak Tartare. What? You wanted to try something new and daring, right?

6) Steak Sandwiches – so good with leftover steak, too!

7) Wagyu Kobe Beef Steaks – if you haven’t tried them, now’s the time!

8-14) Try these recipes for everything from Rosemary-Crusted Porterhouse to Rolled, Stuffed Steak

Enjoy this little adventure in steak eating for 2014. I know I will!

Gorgeous Prime Rib for the New Year

We’re all gearing up to ring in 2014 in style. So why not serve a meal that screams, “Special occasion!!!!!”

That would be prime rib. Oh, beautiful, delicious, prime rib.

We make statements with our food. We may not realize it but we do. Cheeseburgers say, “Hey, I’m being casual. Shoes are optional.” But prime rib? That says, “This is important to me and we must celebrate!”

Chef Michael Symon has some excellent advice for making YOUR prime rib the best it can be. See his prime rib tips here.

This one takes time, folks. So if you’re in a hurry the cheeseburgers might be a better option. But if you have the time to do it properly, salt overnight, let it sit after it’s done in the oven – THIS will be a masterpiece.
