I’m always confused which wines to serve with which dishes. I need a personal guide (maybe a cheat sheet) to help me navigate this territory.

I know that the right wine can bring out the flavor of a great steak – and vice versa. So I really want to get this right!

This handy chart shows us just what wine to serve with every meal – namely steak.

Want to serve beef tenderloin tips? Pair them with a nice Zinfandel for optimal flavor acceleration.

How about Sirloin steak? A lovely Mendoza will enhance the meal beautifully.

Mardi Gras Recipe

It’s almost Fat Tuesday! Mardi Gras is a time to celebrate and feast before Lent.

Food is such a big part of this fun time and we’ve gotta do it right!

When you think of traditional Mardi Gras fare there’s Chicken Andouille Gumbo, Shrimp Etouffee, Creole Fried Rice, Muffulettas and King Cake.

But what if, like me, you’re hankering for some beef this Mardi Gras? Well, lucky for us, there’s a recipe for that!

Check out this Mardi Gras steak recipe. You can create this using whichever steak cuts you love: Kobe beef, ribeyes – the choice is yours!

The Original New Orleans Bourbon Street and Mardi Gras Steak

Ingredients:
2 scallions, white and greens, thinly sliced
1/3 cup chopped red onions
2 tbsp. minced garlic
1 tbsp. grated, peeled fresh ginger
1 tsp. minced, seeded jalapeno pepper
1 tbsp. ground coriander seeds
1/4 tsp. each black and cayenne pepper
1 tsp. ground cinnamon
1/2 tsp. vanilla extract
1 tsp. each dried basil and kosher salt
1 packed tbsp. light brown sugar
1/2 cup fresh orange juice
1/2 cup white balsamic vinegar
1/4 cup each red wine, the soy sauce and bourbon into the spice mixture, vinegar, soy sauce, bourbon whiskey and olive oil
4 (8 oz.) Kansas City Strip Steaks

Directions: In a small bowl, combine the scallions, red onions, garlic, ginger and jalapeno pepper. In a large bowl combine the spices, basil, salt and sugar. Whisk the orange juice, both vinegars, soy sauce and bourbon into the spice mixture. Slowly drizzle the olive oil, whisking constantly. Add the scallion mixture and combine. Add the Kansas City Strip Steaks to the marinade and coat well. Marinate in the refrigerator overnight, turning once.

Bring to room temperature before grilling. Grill the steaks over hot coals 3-4 inches from the heat source for about 5 minutes per side for medium rare. Let rest for 10 minutes, before slicing against the grain into 1/4 inch thick slices. To serve, arrange the steaks on a large platter together with sliced tomato, onion, basil and fresh mozzarella salad.

The Salad:
2 large vine ripe tomatoes, sliced thick, 1 red onion, sliced thin, 2 cups of fresh basil leaves, 8 oz. sliced fresh mozzarella. Topped with extra virgin olive oil and sprinkled with white balsamic vinegar.

Me too!

For Valentine’s Day, you can’t go wrong with a dinner of tender, succulent filet mignons. They’re fork tender – like your love!

Looking for something more hearty? Try cooking some Beef Wellingtons. The flaky pastry crust gets me every time. I’m a sucker for this all-in-one meal. It’s delicious!

Now, if you are showering affection on a man this Valentine’s Day, statistics show (okay, my life experience, really) that a manly T-bone steak says, “I love you” like nothing else.

Seriously, the way to ANYONE’s heart is through the stomach!

Valentine’s Day Gifts for Him

Romantic gifts for men can be tricky.

But the simplest way to come up with a winner is to think, “What does he like?”

Sounds easy enough, right?

My hubby LOVES beef. A steak cooked on our backyard grill is probably the pinnacle for him.

  1. T-bone steaks. They’re hearty. And manly. And shaped like a heart!
  2. Porterhouse steaks. These babies are man-sized and so delicious.

Top Sirloin and Steakburgers – Two At Once

Top Sirloin and Steakburgers

So, in my house, people like to make things difficult. Not everyone likes the same cut of beef.

Okay, I’m just as much to blame.

But, we like what we like, right?

For that reason, I usually cook “options.”

When my boys are involved (which is basically always) I love to do meals on the grill like Top Sirloin steaks AND steakburgers.

Everybody’s happy and there’s no complaining. A real plus when you have pre-teen boys.

It’s just as easy to order this top sirloin steak duo and then cook it together as it would be to just prepare one entrée. And, hey, variety is the spice of life!

The new year is here!

Time to make some resolutions. And if you’re a foodie (and I know you are) at least one of them must involve food.

How about trying steak tartare in the new year?

Cooking beef bourguignon?

Maybe resolve to host more dinner parties?

It’s a lesson every man or woman needs.

14 Favorite Things From 2014

What I should really call this post is “14 Things That Made Me Happy in 2014.”

A bit wordy. But more accurate.

The nightly news was filled with dramatically terrible things that happened this year – devastating weather events, shootings, etc.

For me, in light of all that can and will go wrong in the world, it’s been the day-to-day simple pleasures that brought a smile to my face. 2014 was filled with them. But you have to stop and look for them. These are mine, so here goes:

  1. Giggling through the movie Big Hero 6 with my youngest son. Animated. Silly. Perfection.
  2. A visit to the beach. Brief, but very necessary.
  3. Prince George’s Christmas photographs.
  4. That one time I had five minutes to myself in the bathroom. Moms and dads, you know what I’m talking about.
  5. Grilled steak on the patio, my husband pouring me a glass of wine and Garth Brooks on the radio.
  6. The love my dogs showed me every day.
  7. My husband’s silly texts. He’s got a way with emojis.
  8. My boys hitting the baseball over the fence. Exhilarating.
  9. Finding “Friends” reruns when I couldn’t sleep.
  10. Summer. Just the whole thing.
  11. “The Voice.” It’s a show my kids actually watched with me.
  12. Good friends coming to my rescue when I needed it most.
  13. Lupita Nyong’o. Don’t know who she is? Check her out.
  14. Gathering around the dinner table and seeing faces I adore.

Recipe for a Happy Life This Holiday Season

What really makes you happy?

For me, it’s good food, good people and gratefulness.

Here’s my RECIPE for a happy life during the holidays (and all year ‘round):

 

Add equal parts juicy steak and potatoes

Place happy, smiling people around my table

Sprinkle liberally a good dose of humility and thankfulness

 

That’s it.

It’s simple, really.

If we all focus on the truly wonderful things we have in this life, there’s no room for the negative.

I did mention steak, though, too, right? Make sure there’s steak.

Hungry people tend to be grumpy.

The taste of a perfectly grilled steak with its hearty, yet tender, flavor makes everything right in my world. The happiness recipe definitely calls for steak.
