Steak Scampi

Steak Scampi

Ingredients:
3/4 c. dry white wine
1/4 c. olive oil
4 tbsp. crushed garlic cloves
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. crushed red pepper
2 tbsp. parsley
4 tbsp. butter

Directions:
Combine above ingredients, excluding butter (mix well), place steak (s) in a ziploc bag and pour marinade over steaks, refrigerate approximately 4-6 hrs.  Remove steaks from bag and reserve marinade.  Cook steaks as desired (grill, broil, etc.)  In sautee pan over medium heat, melt butter then add remaining marinade.  Cook for about 5 minutes then pour over cooked steaks.

Garlic and Jalepeno Marinade

Garlic and Jalepeno Marinade

Ingredients:
1 tablespoon olive oil
2 tablespoons lime juice
3 medium cloves of garlic, minced
salt and pepper, to taste (about 1 tsp)
1/2 teaspoon basil
1/2 teaspoon rosemary
1 tablespoon jalapeno sauce
1 tablespoon red wine vinegar
4 10 oz Kansas City Ribeye Steaks

Directions:
Combine oil, lime juice, salt, pepper, basil, rosemary, vinegar, garlic and Jalapeno sauce.  Marinate Kansas City Ribeye steaks for 30 minutes or longer.  Remove from marinade.  Grill or broil until steak is at the doneness that you like (for medium rare, approximately 4 minutes on one side and 3 minutes on the other side, turning only once.)

Bayou Beef Marinade

Bayou Beef Marinade

Ingredients:
1 tbsp each:
old bay seasoning
canola oil
lemon pepper seasoning
garlic powder
onion powder
fresh lemon juice

2 tbsp each:
worchestshire sauce
tobasco sauce
freshly ground black pepper

Directions:
Blend all ingredients together and coat 4 1-inch thick filets & marinate for 20 min. at room temp.  Cook on med-high preheated grill for approx. 6 min. per side for medium temperature; longer for well & shorter for medium-rare or rare.  Let steaks rest for 8 minutes before serving/slicing.  Make same blend independently as a salad dressing & service sliced steak atop for a light dinner/hearty lunch.
