Steak and Bacon? Oh Yeah!

Momma Hen has an amazing recipe for flank steak with bacon sauce. Bacon sauce! That’s a new one for me.

Check out her recipe at Momma Hen’s Kitchen. Momma pulls no punches and this meal is no exception. It’s fierce. It’s savory. And it will put you in a new category with the people who are lucky enough to sit at your table.

Try it out! And let me know if it changes your life . . .

“Frank” Discussion

According to Parade magazine, “Americans eat 7 billion hot dogs between Memorial Day and Labor Day. Laid end-to-end, the links would circle the Earth about 21.5 times.”

So my question is: If you’re going to eat THAT MANY hot dogs, why not make sure they’re the best? I ordered these babies for our beach vacation and they were a hit! They’re all beef and you can really tell.

The flavor is fantastic and the aroma made us all hungry and ready to eat. You know how really yummy things can do that to you?

Don’t get caught with less-than-desirable dogs when YOU decide to cook some up on the grill. Your neighbors (and the Earth) will thank you for it.

Burger Bonanza

Now THAT’S a well-used grill!

We often have impromptu get-togethers in our backyard with the neighbors. So. . . we’ve got to keep lots of good food on hand. You know, just in case.

There are always steakburgers in our fridge or freezer and this weekend we just happened to have a bunch on the grill when our neighbors stopped by for a swim and a burger. What fun!

This is my beautiful friend’s “halfburger.” I’m trying to get her to patent the name, but she just thinks I’m crazy. She is very dainty and lovely and half a burger is all she needs.

Me? Well, let’s just say I can easily handle an entire burger.

We just love summer at our house and when you’re prepared, fun can happen at any time!

Steakburger Secret

How have I gone my whole life not knowing this tidbit?

I have just learned the ultimate secret to making perfect patties. The next time you cook steakburgers you must try it.

Elizabeth Karmel, a total grilling diva, tells us that putting a thumbprint in the middle of your burger before placing it on the grill keeps it flat and avoids the “swollen belly burger” syndrome.

Who knew? Well, apparently this is a technique the restaurants have been holding close to the vest for years. I feel so “in the know!”

Elizabeth even hawks a “Steakhouse Burger Press” that automatically shapes your patties and includes a thumbprint on each one. How’s that for efficient?

You can check out her burger press here. Get your steakburgers here . . . and happy thumbprinting!!!

Teriyaki-fied Steaks

If you’ve read this blog for any amount of time, you know I LOVE Teriyaki sauce on my steaks. It’s a bit of an obsession.

When I go out to a restaurant, nine times out of ten they will not have a Teriyaki-infused steak on the menu. Nor will they have Teriyaki sauce on hand for my amusement.

This makes me bitter and forlorn.

If given a choice, I cook steaks at home where I can control the Teriyaki-ness of my steak. I’m crazy like that.

I found a wonderful recipe for a fancy Teriyaki sauce over at Cookistry.  Check it out and tell me Teriyaki on steak isn’t the best thing in the world.

I dare ya!

More Beefy, Beachy Goodness

When you’re at the beach you don’t realize you’re hungry until you’ve stripped off your wet, sandy bathing suit, taken a shower and then sat down.

And then by that time, it’s too late . . . you’re RAVENOUS.

For us, the grumpies start to appear and nobody’s happy until they’ve eaten.

That’s why we like to cook in our little condo. I usually leave the beach early to get the meal rolling and then head off the “grumpies” before they appear.

See how that works?

This gorgeous photo is a steakburger meal we prepared one night. But it’s not just ANY steakburger. It’s got Vidalia (sweet) onions in the beef. And boy do they flavor that beef!

Some of us like to make them into cheese steakburgers (like the one above), but that night I preferred to make mine an onion steakburger with no bun marinaded in Teriyaki sauce. I’m crazy about the stuff. Those yummy onions mixed with the marinade brought out the amazing flavor of the burger. I just plain didn’t need a bun.

Everybody was happy because they got to make theirs however they wanted it.

And those grumpies I mentioned? They stayed far away that night. Well played, if I do say so myself.

Oh, Steak, How I Love Thee

This, my friends, is why I love ordering the food I enjoy and having it sent to me on vacation.

I get to indulge in my favorite steak — exactly the way I want it — in a gorgeous setting. It doesn’t get any better than that.

This was taken on our seaside balcony in Florida. This Kansas City strip was to die for.

Our group was so thankful to have a beautiful steak dinner without all the headaches of reservations, waiting for a table and not getting a meal exactly how we want it.

It was a relaxed, perfect night. And isn’t that what a vacation is supposed to entail????

Ahhhhh. . . . .

All-Beef Franks, Anyone?

So, we’re back in the real world after a wonderful visit to Florida’s Gulf coast. It was well worth all of the wondering and worrying and ultimately the decision to keep our plans.

The area was beautiful and people seemed genuinely happy to have us there. That’s always nice, right? To have people happy you’re there?

We always like to cook in our little rental when we travel there because we like what we like and — well — we’re kind of picky.

As I’ve done for the past few years, I had an order of some of my faves sent to me there and let me tell you we were not disappointed.

Isn’t it beautiful?

The first meal we cooked was an all-beef franks extravaganza. Can’t go wrong with that, I say.

We were like Burger King — you could totally have it your way. Plain, ketchup, mustard, spicy mustard, relish, cheese . . . anything.

We cooked these babies on our trusty George Foreman grills indoors. The place smelled so good!

Cooking for a bunch of hungry vacationers sort of makes you well-liked. And I liked earning my place at the top of the food chain (so to speak) every night. It makes everyone happy when Mama’s happy.

More scrumptious meals from our week later!

Steaks on the Beach

So, my long-awaited package arrived yesterday. I can now cook the things I crave . . .

My order of Vidalia onion steakburgers, all-beef hot dogs and Kansas City strip steaks has arrived! And our vacation spot in Ft. Walton Beach, FL, is the perfect place to enjoy our favorite meals.

Oh, and that’s my son’s service dog — Marley — he goes everywhere with us now. He commandeered his favorite spot the moment we got here and he hasn’t left since. There’s so much to see!

The weather is beautiful, the beach is beautiful and our dinner tonight is going to be heavenly.

Stay tuned for my report on our “Steaks on the Beach.” They’re gonna be fabulous!

Good Times, Good Food

Did you have a great Independence Day?

We’re here in Ft. Walton Beach, FL, enjoying the amazing views, sounds, smells and ambiance. That crazy oil spill didn’t keep us away and we’re so glad we made the decision to come.

Here’s what it looked like yesterday . . .

It is uncrowded — a tragedy for these parts, especially at this time of year. And our stretch of beach is tarball-free . . . so far.

I did have a little bit of tar on one leg after a particularly rough playtime in the ocean with my youngest son. I’m not sure where it came from because it wasn’t visible. But it was just a little and they had special wipes at the pier that got it off in a jiffy.

What’s a little tar among friends?

We decided to taste a little of the local fare here so we can help support the area during this rough time. We tried a local steak house and nibbled on ribeyes and lobster. Mmmmmm.

But it wasn’t  as good as the delivery I have coming later this week will be. I’ll be cooking some faves in our home away from home and I can’t wait.

We’ve decided that we are going to have a great time spending quality time with our kids and enjoying great food in an amazing place — one of this country’s jewels. So check back for more on what we’re cooking on our trip to the Gulf Coast!

Make Your Steaks Patriotic

This Independence Day weekend, show your true colors by branding your steaks with a patriotic “USA.”

Your steaks will never be the same.

Have fun, enjoy your freedom and let’s all remember to toast our nation’s birth this weekend.

Happy Independence Day, everyone!
