Buffalo Jerk Tailgating Sauce

Buffalo Jerk Tailgating Sauce

1 onion, minced
2 tablespoons garlic, minced
8 oz. butter
1 cup hot sauce
1 cup soy sauce
2 tablespoons fresh lime juice
1 cup brown sugar
1 cup honey
2 tablespoons fresh ginger
1 tablespoon ground coriander
1 tablespoon cayenne pepper or paprika
1 tablespoon ground cumin
1 teaspoon dry mustard
1 teaspoon ground nutmeg
1 teaspoon ground cloves
1 teaspoon ground anise

Melt butter in a large saucepan over low heat.  Saute the onion and garlic until the onion is translucent.  Add the hot sauce, soy sauce, lime juice, brown sugar, honey, ginger, coriander, pepper, cumin, mustard, nutmeg, cloves, and anise.  Reduce heat and simmer sauce, uncovered, for 20 minutes, stirring occasionally.
