Caballeros Marinade

Caballeros Marinade

Ingredients:
1/2 cup ketchup
1/4 cup hot picante sauce
1/2 cup balsamic vinegar
1 tablespoon black pepper
2 teaspoons hot sauce
2 teaspoons chopped garlic
1 teaspoon salt
3/4 cup olive oil

Directions:
In a medium bowl whisk together the first seven ingredients until blended.  Slowly add olive oil in a steady stream until incorporated.  Refrigerate until ready to use.  Makes 2 cups.

Mikey’s Smokin Steak

Ingredients:
1 cup white vinegar
1 oz hot sauce (Texas Pete)
1/2 cup cooking oil
1/2 cup fresh ground peppercorns

Directions:
Mix oil, vinegar, and hot sauce together.  Place steaks
in shallow dish and pour mixture over.  Sprinkle – 1/2 of
ground pepper over steaks.  Let set for 20-30 min. in refrig. 
Fire up grill – high heat for 10 min.  Reduce heat to med-low. 
Add steaks.  Cook as desired – just before removing from grill
sprinkle remaining peppercorn over them.  Remove from grill
and serve immediately.
